Instant Pot Horchata – Ultra Creamy and No Added Sugar

For years I've been a “I'll just have water” kind of gal at restaurants.  I eat out for the food, not for the drink.

But wow, Mexican restaurants put the true test on my self-control with all that creamy ice-cold Horchata on tap action goin' on!

Do you agree?

In case someone hasn't heard of it, let me quickly explain what Horchata is so we can all get super excited about this new recipe together!

WHAT IS HORCHATA

Horchata is a Mexican drink most commonly made with rice, cinnamon, and sugar.  The rice is soaked for several hours, blended with water, cinnamon, and sugar, then strained to make a smooth, white drink that looks like milk.  Variations of the drink include the addition or substitution of nuts and seeds for the rice.

Restaurant style Horchata is amazing, but is heavily sweetened with sugar, making it more of a treat, in my opinion, vs a refreshing drink to sip on 3 times a day (which is how we like it).

So naturally, I concluded that if I wanted to let my kids drink a quart of it daily, the recipe was going to need some tweaking.

MY HOMEMADE HORCHATA DISCOVERY

When we were newlyweds, I set out to impress my husband by making him his favorite Mexican drink.  It turned into quite the ordeal.  The rice had to be soaked overnight, my blender was too small and pathetic to break it down very well, and my sieve was not as fine mesh as it needed to be.  Basically, we had Horchata so thick we could have eaten it with a spoon.  Oh, it was gross.

It wasn't until my sis told me about a new appliance called the Almond Cow, that I got the inkling to give it another try.

You know I love a good kitchen appliance, my friends, and THIS, is a GOOD one – more on it in a sec!

I'm not new to making almond milk, in fact I use this Instant Pot/blender Almond Milk recipe often.

But you know what always sends me back to the store-bought almond milk?  It was the darn Nut Milk Bag.

To be honest, it's not all that hard, but the straining, squeezing, and then cleaning of the bag was just an extra 15 minutes of cleanup that kept me saying, “I'll just put it on my grocery order.”

When I watched Cami make herself some cashew milk with the Almond Cow, I was immediately sold.

WHAT IS AN ALMOND COW?

The Almond Cow is an all-in-one plant-based milk maker that magically blends your nuts, coconut, or oats and separates the pulp from the milk too.  When it's done blending, you're left with foamy, delicious milk in the base, and the pulp remains in the filter basket.

To enjoy, just pour your milk into mason jars and scoop the pulp into a container for another purpose (we'll talk about that in a sec).  Rinsing out the basket takes about 10 seconds and YOU ARE DONE!

ALMOND COW HORCHATA

I wanted to try something a little different with the Almond Cow and that's how this Instant Pot Horchata trick came to be.

With the Instant Pot, we can skip the overnight rice soak and get that done in less than 10 minutes with the magic of pressure cooking.

But I didn't stop there!  I added cinnamon sticks and dates to the pot as well to really infuse the rice with as much flavor as possible, then added cashews to make the milk extra EXTRA creamy.

Pressure cooking the ingredients softens everything so well that it can easily be blended in the Almond Cow or a blender.

Note:  I should add that to make nut milk with the Almond Cow, nuts don't HAVE to be softened or soaked, but in my experience, the milk is more flavorful if you do.

WHY YOU WILL LOVE INSTANT POT HORCHATA

  • FASTER:  1 minute pressure cook time, 5 minute natural pressure release, and it is READY TO BLEND!
  • HEALTHY!  Sweetened with dates and thickened naturally with rice and nuts.
  • THE COOL FACTOR:  Not to brag, but my kids, husband, sister, and especially my Horchata lovin' brother in law talked for days about this recipe.  And my kids felt super special that they got flavored milk for a change.
  • SOOTHES THE SOUL:  Sippin' slowly on Horchata is like sending peace right to your soul.  I don't know what it is, but it's got superpowers.

HOW TO MAKE HORCHATA IN THE PRESSURE COOKER WITH THE ALMOND COW

  1. Everything goes in the pot
  2. Pressure cook for 1 minute until everything is soft
  3. Add water to the Almond Cow base
  4. Add half of the rice mixture into the filter basket
  5. Twist the filter basket into place
  6. Attach motor to the base
  7. Press the start button and let it go through 3 cycles of blending
  8. Open basket
  9. Scrape pulp into a container and add remaining rice mixture; blend again
  10. Set top motor aside
  11. Behold your creamy Horchata masterpiece!
  12. Whisk in vanilla extract for extra flavor

HOW TO MAKE HORCHATA IN A BLENDER

To do this in a blender, add all of the rice mixture into a high speed blender with the water and blend until very smooth.  Pour through a nut milk bag and squeeze the bag to release the milk into a bowl (more details in the recipe card below).

TIPS FOR MAKING THE BEST HORCHATA

  • WHITE RICE VS BROWN RICE:  I really loved the nutty flavor of the brown rice, but my kids preferred the white.  To use brown, cook the rice for 5 minutes instead of 1 and use 1 1/2 cups of water instead of 1 cup.
  • USE RAW CASHEWS:  Avoid roasted and salted cashews.  I already made that mistake for you, yuck.  If you don't like the idea of cooking the cashews to soften them, simply plan ahead and soak your cashews overnight instead.
  • ALMONDS:  Swap the cashews for almonds if you like.  It's not quite as creamy, but it works!
  • CINNAMON:  If you can find Vietnamese cinnamon sticks, they are incredible!  I order them in bulk on Amazon because I love them so much.  Regular cinnamon sticks will do just fine, so don't stress it if that's what you have.  I like a strong cinnamon flavor so I use 3 sticks.  If you'd like it milder, go with 2.  Ground cinnamon can also be used, but I had issues with it clumping together in the fridge.  The cinnamon sticks did a great job of infusing flavor into the milk without the clumping.
  • ON THE ROCKS:  My preference is to serve Horchata over crushed ice, but my husband says that large ice cubes is the way to go.  Regardless, just serve it ICE COLD!

HOW TO STORE HORCHATA

Homemade almond milk doesn't last as long as store-bought, and the same goes for Homemade Horchata.  Store in a sealed container (I use mason jars) and enjoy within 3 – 5 days.

VARIATIONS OF HORCHATA

  • SPICED HORCHATA:  Go crazy with your favorite warm spices like cardamom, nutmeg, cloves, and even cayenne.
  • FRUITY HORCHATA:  Add strawberries, raspberries, mangos, bananas, etc to the filter basket or blender to make a yummy fruity variation.
  • CHOCOLATE HORCHATA:  A scoop of cocoa powder or Crio Bru grounds makes this feel like a chocolate milkshake.

EXTRA TIDBITS

WHAT TO DO WITH LEFTOVER NUT MILK PULP

Don't waste the pulp!  I'm guilty of tossing way to much almond pulp over the years for lack of knowing what to do with it.  The Almond Cow website has recipes for cookies, cakes, cereal bars, “pulpmeal” (which is a play on oatmeal), and more.  Go check it out!

Ingredients

  • 1 cup raw cashews
  • ⅓ cup white rice
  • 2 – 3 cinnamon sticks (depending on how strong you want the cinnamon flavor)
  • 6 pitted dates
  • pinch of salt
  • 1 cup water
  • 5 cups water
  • 2 teaspoons vanilla extract

Instructions

Instant Pot Horchata – Almond Cow Directions (see notes for blender directions)

  1. Add cashews, rice, cinnamon sticks, dates, salt, and 1 cup water to the pressure cooker pot and stir.
  2. Secure the lid and turn pressure release knob to a sealed position.  Cook at high pressure for 1 minute.
  3. When cooking is complete, use a natural release for 5 minutes, then release any remaining pressure.  Stir the rice.
  4. Fill base of Almond Cow with 5 cups water (it should be at the minimum liquid line).
  5. Place half of the rice mixture in the filter basket (yes, even the cinnamon sticks).  Attach the filter basket to the top of the Almond Cow and twist in the direction of the “close” arrow to secure (make sure it is on tight).  Attach the top to the base.
  6. Plug in the Almond Cow and press the cow start button.  It will go through 3 automatic blending stages so leave it alone until it finishes.  When the green light stops flashing, it is done.
  7. Discard pulp from the filter basket (or save it and see note for how to repurpose it).  Repeat with the other half of the rice mixture.
  8. The base of the Almond Cow is now filled with thick, creamy Homemade Horchata – no need to strain!
  9. Whisk vanilla extract into Horchata and pour into quart size mason jars and store in the refrigerator for 3 – 5 days.  Shake well before serving.

Notes

Instant Pot Horchata – Blender Directions

Ingredients

  • 1 cup raw cashews
  • ⅓ cup white rice
  • 2 – 3 cinnamon sticks (depending on how strong you want the cinnamon flavor)
  • 6 pitted dates
  • pinch of salt
  • 1 cup water
  • 5 cups water
  • 2 teaspoons vanilla extract

Instructions

  1. Add cashews, rice, cinnamon sticks, dates, salt, and 1 cup water to the pressure cooker pot and stir.
  2. Secure the lid and turn pressure release knob to a sealed position.  Cook at high pressure for 1 minute.

  4. Stir the rice, do not strain it.
  5. Pour rice mixture into a high speed blender.  Add 5 cups water.  Blend on high speed until smooth, about 1 ½ – 2 minutes.
  6. Place a nut milk bag inside a medium size bowl and pour milk into bag.  Gently twist and squeeze the bag to release milk into the bowl.  Discard leftover rice pulp (or see note for how to repurpose it).
  7. Whisk vanilla extract into Horchata.
  8. Pour strained Horchata into quart size mason jars and store in the refrigerator for 3 – 5 days.  Shake well before serving.

Notes

  • Almonds can be used instead of cashews.  It isn’t quite as creamy, but it’s still delicious.
  • If you can find it, Vietnamese Cinnamon sticks are amazing!
  • If you’re concerned about cooking the cashews to soften them, you can use them uncooked.  The Horchata won’t be quite as smooth and creamy.  If you plan ahead, you can soak the cashews overnight as well.
  • I prefer using cinnamon sticks because the flavor infuses into the Horchata better.  Ground Cinnamon tends to clump a bit.  If you prefer to use the ground, use 2 teaspoons and make sure to shake the milk well before pouring it into glasses. 
  • There is a lot of nutrition left in the pulp!  Here are several ways to use it.

    My family really enjoys Horchata but we seldom buy it since it can be expensive along with having no idea what ingredients the restaurants in our area put into it. I’ve never tried making Horchata at home because I thought it would be tedious, time consuming and possibly not taste as good as what we could buy but an Almond Cow would be the perfect tool to use along with my Instant Pot. My daughter is lactose intolerant (along with having to be gluten free) so the Almond Cow would be a fun tool for her to use with me in experimenting with different types of plant-based milks.

    My husband and I have been working to get out of debt for the last month and we are slowly making progress, it can be really difficult to cut costs when you are lactose intolerant so I’ve looked into making my own almond milk but we don’t even own a blender, so winning an @almondcow would be truly a dream come true… Plus your recipe for horchata looks amazing!!

    I would love the almond cow to make our own dairy free milk since 2 of our children are allergic to regular milk.     I would Absolutely love to win an Almond Cow!!! Both of my boys have severe dairy allergies and can not take but milks to school. So our only option is coconut milk. And I have yet to find a good wholesome organic coconut milk that isn’t full of tons of unnecessary processed junk like fillers and such. I WOULD LOVE to be able to give them a clean delicious source of nutrition! Not to mention make crazy delicious recipes like this instant pot horchata!!!

    I would so love to win the Almond Cow. I had to give up making my own homemade nut milks because I have severe osteoarthritis in my thumb joints. Homemade tastes so much better than store bought, except for the super crazy expensive brands like MALK, which I rarely buy.

    I LOVE this recipe. My husbands favorite drink every time we go to a Mexican restaurant is Horchata but I LOVE that this is clean. I can’t have dairy due to a health condition so I’m super excited to try this.     I’ve never heard of the almond cow until I saw your Horchata story on IG. This is one of the coolest appliances I’ve ever seen. I tried making homemade oat milk once.     I am with your husband. The only way to drink horchata is in the biggest possible cup and super cold. That being said, I recently developed a pretty nasty lactose intolerance and I miss horchata since a lot of places spike it with milk. Boo! Not to mention, the dairy free milk prices are killing me! I have tried making them myself in the blender, but it is just so much work.

    I would love this for my husband! In our 7 years of marriage I have had many failed attempts at making homemade HORCHATA. My husband often describes Mexico and how Horchata was a staple in most households. It was something that brought everyone together! When visiting families that was a drink everyone would sip on, instantly inviting comfort and peace in the home. That is something I would love to add to our environment.     This recipe intrigues me. Horchata sounds delicious and I think I’ll have to give it a try. I’ve got the time to do it via a blender, as I’m retired.     Another amazing recipe! I’ve been making almond milk for years with the mesh strainer bag. It’s a mess and a hassle but it just tastes so much better than store-bought!     I was born lactose intolerant over 50 years ago and I grew up totally avoiding milk. The only alternative then was soy milk. Now, in order to get enough calcium I buy cartons and cartons of almond milk and it is pricey! I would love an Almond Cow and thank you for the chance to win one!

    Thank you for offering up this recipe and this Almond Cow for giveaway! The recipe sounds sooo delicious. I’ve been wanting to make my own milks, but the nut milk bag has sounded time consuming and a bit overwhelming to me. I am not the best there is in the kitchen. I also have back issues that preclude from doing a lot of things on my own, or spending much time in the kitchen anymore. My gut (and dairy) issues would appreciate the Almond Cow And the Horchata. I finally got a job after a year and a half ( I had to switch professions since I could not stand up to do massage anymore) but I am making a lot less money and have to catch up on bills for quite some time before I could even think about a purchase such as this. It really does sound like an item I would use all the time and save $ in the long run…and the pulp – I have seen tons of dog cookie recipes over the years so I could share this tech with my 4 legg-eds and they could reap the benefits as well 🙂

    I love your site and all the wonderful recipes, I would love an Almond Cow, it never fails every time I try and make Almond or Cashew milk I end up with a disaster area in my kitchen, with strainers and nut milk bags and blender, I have a mess. when I’m done making the mess I just don’t want the milk anymore, more trouble than its worth, an Almond Cow would defiantly make it all so simple, easy and minimal clean up, then I would be able to enjoy the milk. I will defiantly try the instant pot method instead of soaking the nuts next, thank you for all the wonderful tips on your site.

    I love your page. I started making my own nut milk after reading you post about using instant pot instead of soaking. That was a game changer because I’m always forgetting to soak the nuts overnight🙄 But I’m totally like you and hate the straining step so I’d love an almond cow! ( I also have a kitchen appliance obsession…my husband calls me “the kitchen gadget queen” which is a title I wear proudly!!! 👸🏻 )

    Thank you for the information on the Almond Cow. I have a severe dairy allergy and have sadly passed it down to my children. So any dairy is strictly prohibited from our home.     Thanks, Marci! I would LOVE to have this Almond Cow as I am always running out of Almond milk, and would love to be able to make my own in a flash and not have to dash off to the store.! Plus, I hate wasting food, so the idea of being able to use the pulp in other recipes is very appealing! The biggest reason I want the Cow is for the ease of cleanup!!     I have been following your page since 2018 wirh my first introduction to egg bites. I quickly purchased the mold you recommended and tried to make them. With a bit of trial and error, I got it perfected that the whole family loves it and still make it to this day for my toddler. I quickly became a fan of yours and have made numerous meals with my indtant pot thanks to you (which my picky toddler and husband LOVE).

    Fast forward, I am almost 6 months post partum and have had to change my eating habits due to my autoimmune disease (hashimotos) and currently doing AIP (elimination diet) so I have to eliminate many things. I’ve tried to make almond milk since the current brands have so many addictive including gums so i can’t use. It’s been a challenge so i try to make them myself but its time consuming and sometimes i don’t think im doing it right based on taste. I’ve currently got into oat milk since im nursing and would LOVE try have the almond cow to make it easier to make these milks for me and my family. Thank you for introducing us to this product and the Horchata recipe. This will be a tremendous help for this tired mama. Love your page and im glad many of your recipes I can still do with some modifications based on my diet.

    I like the various other milks. But when I read the additives on the cartons, I usually just put it back. That said, I’ve tried making almond and cashew milks. And ended up with very little product for my effort, and usually a mess!! I’d love to have the Almond Cow. I’ve enjoyed reading the recipes and will use the suggestions for the remaining pulp.     The Almond Cow looks amazing! I do not tolerate dairy well & made the switch to almond milk a while Aton& I’m not looking back!     Oh my goodness! We love Horchata at my house! I’ve also tried making it – unsuccessfully! There is a restaurant that makes fantastic horchata, if not a bit sweet. But with all the staying home, we haven’t had it but once since February. I love your recipe using dates.

    I have been making almond milk with out vitamin for almost 10years and I feel exactly the same. I hate wronging it out and cleaning the bag. And now since we make shakes every morning for all four of us, I have to make 3xs as much every 3-5 days. The Almond Cow looks like a dream come true!

    I’ll be trying this this weekend. Your recipes are fast becoming some if our favorites! I made the instant pot BBQ chicken and sweet potatoes for dinner last night and we loved the flavors. We are going through a heat wave in California and it was wonderful not to heat the house OR stand over a hot grill!
    I would love an Almond Cow! I started making but milk a couple of years ago, but recently Ive had to make it more frequently because my daughter is now dairy free. Its a pain to strain and clean up the nutbags! I would love to have one container and clean it up in a simple manner.

    Hi Marci! So excited to try this recipe. I love horchata, but I can’t tolerate refined sugars so this beverage has been off of my list for years. I’d love to win an almond cow. My side of the family has a long list of food allergies (peanuts, almonds, eggs, soy, gluten, dairy, sugar, just to name a few), so we are always looking for new ways to make things that we used to enjoy.     I have not heard of Horchata before and it sounds wonderful. I am lactose intolerant and stay away from milk.     Hi Marci, I am also a “just water please” at restaurants as drinks quickly up the bill, but have also given in to the desire for a cool creamy Horchata! My husband is immune compromised and follows a gluten free, no dairy, no sugar diet. That is how I discovered your site, and love your recipes. BUT, as excited as I was hearing about the Almond Cow, there is just no way we can afford one as we are on a very tight budget.     Thanks for this great giveaway! I’m trying to steer towards a healthier diet and that includes cutting out artificial ingredients and weird chemicals that are often found in store-bought products…I love almond milk but am often hesitant to buy it because of all the weird ingredients found in the store-bought versions, but making it myself is such a chore.
