GREEN VEGGIE RICE

INGREDIENTS

– long-grain white rice – low-sodium chicken broth – salt – butter – fresh spinach leaves – green onions – jalapeno – cilantro – juice of 1 lime

Add rice, chicken broth, salt, and butter to the pressure cooker pot and stir. Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 3 minutes.

While the rice is cooking, place spinach leaves, green onions, jalapeño, cilantro, and lime juice in the bowl of a food processor and pulse until mixture is finely minced, almost like a paste.  

When cooking is complete, use a natural release for 10 minutes and then release any remaining pressure.
