Hearty Carrot Cake Oatmeal with a creamy vanilla glaze to start your day off strong!

Ingredients

  • 1 cup unsweetened vanilla almond milk (or any milk will work)
  • 1 cup applesauce
  • â…“ cup pure maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, melted
  • 1 ½ cup old fashioned rolled oats
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup shredded carrots
  • â…“ cup golden raisins
  • zest of 1 large orange

Optional toppings: Chopped walnuts, shredded coconut

For the Cream Cheese Yogurt Sauce

  • ¼ cup whipped cream cheese
  • ¼ cup plain Greek yogurt
  • 12 tablespoons milk
  • 3 tablespoons powdered sugar or maple syrup
  • ½ teaspoon vanilla extract

Instructions

  1. Lightly spray a 7 inch cake pan or a 1 ½ quart or larger heat safe baking dish with nonstick cooking spray and set aside.  
  2. To a large mixing bowl, add the milk, applesauce, maple syrup, eggs, vanilla, and butter and mix well.  
  3. Add the oats, cinnamon, ginger, nutmeg, baking powder, and salt; whisk to combine.
  4. Stir in carrots, raisins, and orange zest.  
  5. Pour mixture into the prepared baking dish.
  6. Add 1 ½ cups of water to the pressure cooker pot and place trivet inside.  Place dish on the trivet using a silicone or tin foil sling to make for easier removal.  
  7. Secure the lid and turn pressure cooker knob to a sealed position.  Cook at high pressure for 25 minutes.
  8. While the oats are cooking whisk together the Cream Cheese Yogurt Sauce until smooth.
  9. When cooking is complete, use a natural release for 5 minutes and then release any remaining pressure.  
  10. Serve hot with a drizzle of Cream Cheese Yogurt Sauce and a handful of walnuts and/or coconut.
  11. Store leftovers in the fridge for up to 5 days.  Add a splash of milk and reheat in the microwave.

Notes

  • This oatmeal can be made up the night before, stored in the fridge, then cooked in the morning. 
  • Do not cook this directly in the pot.  The mixture is much too thick and creamy and will result in a BURN message
  • Do not substitute steel cut oats, they will not be fully cooked at 25 minutes.
